Sweet Boulettes
Boulettes can be served with Brown Gravy or as an appetizer. Other
vegetables, such as eggplant, may
be used to replace 1 cup of the carrots or potatoes. Use your imagination.

3 cups yams, shredded
1 cup potatoes, shredded
1 1/2 cups carrots, shredded
1/4 cup onion, shredded
1 cup chickpea flour or whole wheat pastry flour
1/2 teaspoon salt
oil for frying
Mix all of the ingredients together, and form into 2-inch balls or 1-inch thick
patties. If necessary, add more flour to make them stick together. Cook in hot
oil about 1/2 inch deep, turning carefully until golden on all sides. For
baking, add 1/4 cup oil to the ingredients, and mix well. Brush each patty with
oil on both sides, and bake at 350 degrees until golden, approximately 40
minutes.
