Roasted Asparagus
Once youÕve had asparagus prepared this way, youÕll never be content with
steamed asparagus again!
1 lb asparagus
olive oil
Salt to taste
1 lemon, quartered
Trim asparagus: break off stems at the point where they easily break,. Rinse in
cold water. Pat dry and toss with olive oil. Sprinkle with salt. Place on
baking sheet covered with aluminum foil. Cover with additional aluminum foil
and bake in preheated 425 degree oven for 20 minutes. Lower heat to 400
degrees. Uncover and roast another 10 minutes. Serve with lemon wedges.
Note: Roasted asparagus can also be served as part of a spring salad. Serve on
shredded romaine lettuce with a citrus vinaigrette, sliced strawberries, and
toasted almonds.
