Raisin Bars
1 cup whole wheat pastry flour
1 cup rolled oats
2-3 tablespoons sweetener of your choice: brown sugar, succanat, etc.
1/2 tsp salt
1/4 cup oil or applesauce or a combination
1 1/4 cups finely chopped or ground raisins*
1 cup chopped walnuts or other nuts or seeds (optional)
1/3-1/2 cup water, as needed
cinnamon and brown sugar to sprinkle on top!)
Tip: To finely chop the raisins, use a food processor.
Preheat the oven to 325 degrees F. Grease an 8"x8" square baking pan.
Blend flour, oats, salt, and oil/applesauce in a mixing bowl with your fingers until evenly mixed. Add the raisins, nuts, and 1/3 cup of the water. Mix these in, pressing together with your fingers and kneading the dough until blended evenly. Use the remaining water only if absolutely necessary to make the dough hold together.
Press the dough down firmly into the prepared pan and cut the still-unbaked dough into squares with a spatula or knife. Sprinkle with cinnamon and brown sugar. Bake for 30 minutes. Cool, and remove from pan.
