Pan Perdu (Lost Bread)
Called “lost” because the stale bread otherwise would be thrown
away, or lost. You should soak the bread long enough so that it becomes soft,
but not soggy. This will depend on the thickness of the slices, but generally
30 seconds is long enough.
2 1/2 cups soymilk
1 tablespoon lemon juice
1/2 cup nutritional yeast flakes
1 teaspoon salt
1/2 cup whole wheat pastry flour
6 tablespoons arrowroot powder
2 tablespoons maple syrup
1/4 teaspoon vanilla
1 large stale sweet French bread, sliced 3/4 inch thick
confectioner’s sugar for dusting
Mix together all of the ingredients except the bread and the sugar. Dip the
bread in the mixture, and soak for a few seconds on each side. Pan fry in a
hot, oiled skillet until golden on both sides. Sift sugar on top, and serve
with maple syrup.
