Okra and Tomatoes
The classic Southern okra combo. Try it with rice.

1 onion, chopped
2 tablespoons canola oil or olive oil
1 lb okra, sliced
1 15-oz. can chopped tomatoes
1 cup fresh or frozen corn (optional)
salt and pepper to taste

Saute onion in oil until translucent. Add okra, and saute another 3 or 4 minutes. Stir in tomatoes, juice and all, and simmer 5 more minutes. Add corn, if desired, and simmer 3-4 minutes until corn is tender. Serves 4-6.
