Serve this simple dish as a cool side dish or as part of a salad assortment. It can be made up to two days in advance.

1 lb carrots, coarsely shredded
juice of 1 orange
juice of 1/2 lemon
1 tablespoon olive oil
1/4 cup fresh cilantro
salt and freshly ground black pepper to taste
In a large bowl, combine all of the ingredient and toss well. Cover the salad
and chill for at least 30 minutes before serving.
