White Bean PÂté
For an interesting appetizer, try spreading this on warmed tortillas, roll up, and cut into 1-inch sections to make pinwheels. From Flax, The Super Food.

2 cups cooked white beans, mashed
1/3 cup finely chopped tomatoes
1/4 cup red onion, minced
2 tablespoons flax oil
1/2 teaspoon cumin
1/4 teaspoon salt
1/8 teaspoon black pepper
Juice of 1 lemon

Drain and mash the cooked beans.

While the beans are hot, add the rest of the ingredients, and mix well. Serve while warm or chill until cold.
