Tropical Black Bean Salad
(From Flax: The Super Food)
Try serving this salad with fresh baked cornbread for lunch or a light supper.
3 cups cooked black beans,
2 to 3 mangoes, cubed
2 cups chopped fresh pineapple
1/2 cup chopped onions
3 cloves garlic, minced
1 jalapeno pepper, minced
3 tablespoons fresh lime juice
2 tablespoons flax oil
1/2 teaspoon salt
In a medium serving bowl, combine all of the ingredients, stir gently, and
serve. You can also refrigerate this salad overnight before serving.
