Salsa
(from Flax: The Super Food)
8 Roma tomatoes, cored, chopped and drained
1/4 cup chopped red onion
1 clove garlic, minced
1 teaspoon shopped jalapeno pepper
2 tablespoons freshly squeezed lime juice
2 tablespoons chopped fresh cilantro
1 tablespoon olive oil
2 to 3 tablespoons flax oil
1/4 teaspoon sea salt
Combine the chopped tomatoes with all the remaining ingredients. This can be
eaten immediately but is best if allowed to chill for about 2 hours so the
flavors can blend.
