Mock Tuna Salad
(From Flax: The Super Food)
1 clove garlic, chopped
1/4 cup chopped onions
2 stalks celery, chopped
1/4 cup chopped fresh parsley
1/3 cup soy mayonnaise
1 tablespoon chopped fresh basil, or 1 teaspoon dried
1 teaspoon chopped fresh oregano, or 1/2 teaspoon dried
1/4 teaspoon cumin
3 cups cooked garbanzo beans, chopped
1/4 cup bean stock
3 tablespoons flax oil
2 tablespoons fresh lemon juice
1/2 teaspoon salt
Mix all of the ingredients together with a fork, and serve chilled.
