Flax
Hermit Cookies
1/2 cup shortening
1/2 cup white sugar
1/2 cup brown sugar
1/4 cup cold strong coffee
1 egg substitute
1 3/4 cups flour
3/4 cup ground flaxseeds
1/2 tsp. baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp. nutmeg
1 cup raisins
1 cup walnuts, chopped
Beat together shortening, sugars, coffee and egg substitute. Stir in remaining
ingredients. Mix until combined. Form into 1 inch balls and place on an
ungreased cookie sheet leaving about 2 inches between cookies. Bake at 375
degrees until no indentation remains when touched, about 8 - 10 minutes.
