Creole Seitan
Add more or less cayenne, depending on your toughness! (My husband  says when it’s hot enough to make your teeth itch, it’s finally too hot!)

1/2 medium onion, minced
1/2 medium bell pepper, minced
1 stalk celery, minced
1/4 cup oil
2 cloves garlic, minced
3 medium tomatoes, diced
2 tablespoons fresh parsley, minced
1/2 teaspoon salt
1 teaspoon paprika
1/2 teaspoon file powder
1/8 teaspoon cayenne
1 bay leaf
3 tablespoon water
1/2 lb seitan, thinly sliced or cubed

Simmer the onion, bell pepper, and celery in the oil for 15 minutes. Add the remaining ingredients, except for the seitan, and simmer for 30 minutes, stirring often. Add the seitan to the sauce. Simmer for an additional 20 minutes, stirring often. More water may be added if the sauce seems too thick. Serve over brown rice or by itself.
