Chocolate Silk Pie
Vegan desserts couldn’t be simpler!

1 12-ounce container silken tofu
12 ounces vegan baking chocolate
1 teaspoon vanilla extract
1 vegan pie crust, baked according to directions

Melt chocolate in double boiler or in microwave at low power. Blend tofu in blender or food processor. Add chocolate and vanilla, blend until smooth, and pour into prepared pie crust. Refrigerate for one hour before serving.
