Cactus Quesadillas
Found in many supermarkets, cactus leaves have a taste similar to green beans.

2 cactus leaves
1/4 red onion, sliced (optional)
1 tablespoon canola oil
juice from one lime
1 cup shredded white dairy-free cheese
tortillas

Slice cactus leaves into 1/4 to 1/2 inch slices, crosswise. Place canola oil in sauté pan and heat. Add cactus strips and onion, if using and sauté until cactus leaves turn dull green, about 5 to 7 minutes. Sprinkle lime juice on top and remove from heat.

Place a portion (about 1/4 cup) of cactus mixture on 1 tortilla, sprinkle with "cheese", and place on sauté pan that has been sprayed well with cooking spray. Cover with another tortilla and heat until "cheese" melts and the top tortilla sticks to the mixture. With a large spatula, flip the tortillas over into the sauté pan and heat through. Place on serving dish, and with kitchen shears, cut into 8 wedges. Repeat until remaining cactus mixture is gone.
