Ambrosia
Dinner in the South just ain’t complete without a little sweet!

9 navel oranges, peeled and sectioned
1 fresh pineapple, cut into chunks, or 2 (20 oz.) cans, drained
2 bananas, peeled and cut into chunks
1 cup flaked coconut
1/2 cup pecans, chopped
1 tsp. almond extract
1/4 cup powdered sugar
Spash of orange juice
15 maraschino cherries, optional

Combine oranges, pineapple, bananas, cocunut, and pecans in a bowl, and sprinkle with the almond extract. Add powdered sugar and mix well. Add a splash of orange juice, and dot with maraschino cherries if desired. Refrigerate one hour before serving. If refrigerating for a longer time, add bananas and coconut just before serving.
