I love to cook for a crowd so it is always fun to have family visiting. Here are some of my favorite down-home recipes. I hope you'll enjoy!

Favorite Barbecued Ribs

5 lbs. spare ribs, cut into serving size pieces
1 cup firmly packed light brown sugar
1/4 cup Worcestershire sauce
1/4 cup apple cider vinegar
1/2 cup ketchup
2 teaspoons yellow mustard
1 teaspoon garlic powder

Preheat oven to 350. Place ribs in a shallow roasting pan and bake, uncovered for 45 minutes. Drain off all drippings. Mix remaining ingredients, pour over ribs, and bake uncovered for 1 1/4 hour-1 1/2 hours, turning every 20 minutes.

My Family's Fave Mac and Cheese
(this is no ordinary side dish!)

8 ounces medium mac shells
1 tbsp butter
1 egg well-beaten
1 tsp mustard
1/2 tsp salt
1/8 tsp nutmeg
1 cup milk
12 ounces velvetta
1/4 cup grated onion

Cook macaroni in boiling water until tender. Drain, and dump shells into crock-pot. Add remaining ingredients and stir. Cook on high until cheese has melted, then turn crockpot to low until ready to serve.


Chicken Casserole
(this is a quick, easy meal)

3 chicken breasts, boiled, broth reserved
2 boxes chicken flavored stuffing
2 small cans cream of chicken soup
1/2 cup sour cream
1 cup shredded cheddar cheese

Mix everything that comes in the boxes of stuffing with 3 1/3 cup of the broth. Let sit for 5 minutes. Fluff with fork and press half of the stuffing mix into bottom of 9 x 13 pan. Cut chicken into bit size pieces and place on top of stuffing in pan. In separate bowl, mix together soup, sour cream, and cheese. Smooth on top of chicken. Sprinkle the rest of the stuffing on top. Cook at 400 degrees F until heated through and top begins to crisp.
