| The rotting process is an extension of the ripening process. More acids are transformed into esters. However an infection of bacteria or fungai in the fruit can increase the rotting process. This is bescause the bacteria/fungus cause more ethylene to be produced, speeding up the process. There are ways however to slow the rotting process. | ||||||||||||
