BACON STUFFED POTATOES

HEAT OVEN TO 400 DEGREES.

FRY:
1/4 LB BACON
1 ONION
FOR 5-10 MIN AND SET ASIDE.

ADD TO BACON MIXTURE:
1 Tbsp prepared mustard
1/2 c. parmasan cheese (grated)
salt and pepper to taste.
and set aside.

Boil 2 med. potatoes or microwave until tender and cut in half.  Carefully remove the insides with spoon so you make a cup out of the skins.  Combine the mashed potatoes with the bacon mixture and fill shells.  Top with paprika and bake 10-20 min, until tops are golden.

THE PREPARED POTATOES CAN BE STORED IN A FREEZER FOR LATER USE,  UP TO A MONTH AHEAD OF TIME,  AND BAKED AN HOUR BEFORE YOUR DINNER.
