GET AS MUCH OF THE MIXTURE AS POSSIBLE INTO THE TRAY BY PRESSING ON THEM AFTER EACH ADDITION. ALL THE MIXTURE MAY NOT FIT BUT THE REST CAN BE BROUGHT TO THE CHURCH AND ADDED AFTER THE CEREMONY. MAKE SURE THE TOP IS EVEN AND FLAT.
THROUGH A COURSE SIEVE, DISTRIBUTE THE CRUSHED SESAME SEED OVER TRAY. IF SOME OF THE SEEDS DO NOT PASS THROUGH, DISTRIBUTE WITH HANDS. PRESS AGAIN TO FLATTEN MIXTURE. WASH AND DRY SIEVE WELL TO REMOVE PARTICLES FOR NEXT ADDITION.
PASSING FRIGANIA THROUGH SIEVE, DISTRIBUTE EVENLY OVER TRAY TO COVER KOLIVA VERY WELL. IT IS IMPORTANT THAT ALL THE KOLIVA ARE COVERED BY THIS LAYER AS TO NOT TOUCH THE FOLLOWING SUGAR LAYER AND CAUSE IT TO CLUMP. PRESS FRIGANIA DOWN WITH SPATULA AND FLATTEN TOP. WAX PAPER MAY BE USED TO AID IN SMOOTHING OUT THE TOP OF BOTH THE FRIGANIA AND SUGAR LAYERS. ALL THE FRIGANIA MAY NOT BE USED BUT IT MAY BE USED AT A LATER TIME OR IN PLACE OF BREAD CRUMBS IN COOKING. WASH AND DRY SIEVE VERY WELL FOR SUGAR LAYER.
PASS GRANULATED SUGAR THROUGH SEIVE, DISTRIBUTING OVER ENTIRE TRAY. MAKE A THICK LAYER OF SUGAR. ALL THE FRIGANIA MUST BE COVERED. LIGHTLY FLATTEN WITH CLEAN SPATULA TO STRAIGHTEN OUT TOP EVENLY. USE WAX PAPER TO HELP SMOOTH OUT TOP. DECORATE EDGES WITH KOUFETTA, AND MAKE A CROSS USING KOUFETTA IN CENTER AND ON THE LEFT OF THE CROSS, MAKE THE FIRST INITIAL OF THE DECEASED, ON THE RIGHT OF THE CROSS, THE SECOND INITIAL(WITH KOUFETTA) SET WHOLE TRAY IN COOL DRY PLACE TO TAKE TO CHURCH IN THE MORNING.
