| Taco Soup (this recipe is ALL over the palce so I'm not sure who to give credit!) 1/2 bag soy crumbles 1 large onion chopped 1 pkg Hidden Valley Ranch Dressing mix (powder) 1 pkg taco seasoning 1 can pinto beans 1 can hot or mild chili beans 1 can whole kernel corn 1 can stewed tomatoes (mexican flavor) 1 can stewed tomatoes (any flavor) Saute onion in non-stick soup kettle. Add crumbles to heat through. Mix in Hidden Valley ranch mix and taco seasoning. Then without draining, add all of the other ingredients. Simmer for 1 hour. Servings 10 1 cup svgs 3 WW points Hints/suggestions: If you can, use low sodium Hidden Valley Ranch mix & taco seasoning. Was abit salty. If you use 1 lb ground beef - 5 pts/cup, 1 lb regular ground turkey - 4pts/cup, 1 lb lean ground turkey - just over 3 pts/ cup, 1 whole bag crumbles - just under 3 pts/cup. I froze the left overs and it freezes well! |
