| Oatmeal Raisin Muffins 2 c all-purpose flour 1/2 c oatmeal 1/2 c brown sugar, packed 1 tblsp baking powder 1 tsp salt 1 1/2 tsp pumpkin pie spice 1 c raisins egg substitute equal to 2 eggs 1 1/2 c milk 1/4 c Baking Healthy oil substitute Preheat oven to 350*. Spray 2 muffin pans. Combine all ingredients in the bowl. Process until batter is smooth, 10-015 seconds, stopping once to scrape down sides of bowl. Raisins should be in large pieces. Spoon batter into muffin tins. Bake until toothpick comes out clean, aboout 25 minutes. I also made bread out of this. Very tasty and baby liked it also! Serves 24 1.5 pts per serving |
