| Low Fat Carrot Cake 6 egg whites 1 1/3 c sugar 1 c applesauce 1/2 c skim milk 1 1/2 tsp vanilla extract 1/4 tsp ground cloves 1/2 tsp nutmeg 1 tblsp ground cinnamon 2 tsp baking soda 1 c whole wheat flour 1 c all-purpose flour 8 oz can crushed pineapple in own juice 2 c shredded carrots 1/2 c raisins In large bowl, beat egg whites. Gradully beat in sugar, then applesauce, milk & vanilla. Stir in the dry ingredients with a spoon in the order given. Sti in pineapple with juice, then carrots and then the raisins - one ingredient at a time. Pour mixture into a sprayed cake pan - 9x13. Bake at 350* for 35-40 minutes or until toothpick comes out clean. 18 servings 2.5 pts per serving I am serving mine with ff cool whip. However you could make a cream cheese frosting with ff cream cheese - make sure to count the points! |
