| Tortilla Bake |
| Serves 4 Ingredients: 8 corn tortillas (6") 2 Tbsp vegetable oil 1 lb ground beef 1 jar (14oz) verde cooking sauce or 1 jar enchilada sauce 2 cups shredded Cheddar Jack cheese 1 medium tomato, chopped Directions 1. Stack tortillas and cut into 1/2 " strips. In 12" skillet over medium-high heat, heat 1 tbsp. oil. Add half of tortilla strips and fry until golden brown. Remove and drain on paper towels. Repeat with remaining oil and tortilla strips. 2. Preheat oven to 400 degrees F. In same skillet over medium-high heat, cook beef until browned. Add verde cooking sauce. 3. In 2-qt shallow baking dish, layer half of fried tortilla strips and remaining cheese. Bake 15 minutes or until hot. |
