A three variable coordinate system contains an X,Y and Z axis.  The X axis and Y axis cross each other. The X is Horizontal and the Y axiis is vertical.
The Z axis is neither horizontal nor vertical, it comes out at you or ahead of you. The Z axis gives the graph a 3rd demensional when before with only the X and Y axes it had 2 demensions.
