Loaded Potato Bake
8 medium sized red potatoes
5 scallions, sliced
1 16 oz bag shredded cheddar cheese
6 slices bacon
salt, pepper, paprika
2 Tablespoons butter or margarine
1 teaspoon olive oil
sour cream
Cook bacon in large skillet until crisp. Reserve 1 Tablespoon grease. Set bacon aside. Scrub potatoes and partially bake in the microwave. About 5 minutes on one side, flip and another 5 minutes. Cut into chunks and place in large bowl. Melt butter in a small saucepan or the microwave. Add reserved bacon grease and olive oil. Add to potatoes in bowl and toss to coat. Transfer potatoes to 9x13 pan. Season with salt, pepper, and paprika. Bake at 375 until potatoes are tender. Top with cheese, and crumble the bacon on top. Return to oven till cheese melts about 3 minutes. Sprinkle sliced scallions on top and serve with sour cream.
