Easy Fudge with variations
The basic recipe is
1 14oz can sweetened condensed milk
3 cups chocolate chips
1 tsp vanilla
1 Tablespoon baking cocoa
Line a 9 inch round or square cake pan with foil. Butter or coat with nonstick spray. In the top of a double boiler, heat sweetened condensed milk. Add cocoa, stir until combined. Stir in chips until fully melted. Add vanilla. Pour into prepared pan. Chill until set, then cut into pieces.
Variations
Minty alcoholic fudge
Replace vanilla with up to 2 shots mentholmint or peppermint schnapps. You may have to add more chips if it looks too thin. (peppermint extract would also work for non-alcoholic fudge, but start with 1 tsp and add more if needed)
Butterscotch fudge
Replace half the chocolate chips with butterscotch chips. Also good with chopped walnuts.
Peanut butter fudge
Replace half the chocolate chips with peanut butter chips. Also good with chopped peanuts.
Experiment with any combination of chips, nuts, or extracts.
