Shell Casserole
1 16oz box medium pasta shells prepared according to pkg directions.
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1 lb ground beef
1 tablespoon Italian seasoning
salt and pepper to taste
1 26oz jar spaghetti sauce
1/4 cup grated fresh parmesan cheese
1 cup ricotta cheese
1 egg
2 1/4 cups shredded mozzarella cheese, divided
Heat olive oil in a large skillet. Add onion, and cook until translucent. Add beef and garlic; cook until no longer pink, drain off grease. Add Italian seasoning, salt, and pepper.
While beef is cooking, mix together in a small bowl, ricotta, parmesan, 1/4 cup mozzarella, and egg. Stir into cooked beef. Gently stir in cooked shells.
Spray a 9x13 baking dish with non stick spray. Spread 1/2 of the spaghetti sauce on bottom of dish. Spoon shell and beef mixture into dish. Top with remaining sauce and 2 cups mozzarella. Bake at 350° about 30 minutes, or until cheese is melted.
