Grilled Potato Packets
For each packet (serves one) you'll need
heavy duty aluminum foil
nonstick spray
2 medium potatoes peeled or scrubbed, and thinly sliced
2 medium carrots thinly sliced
1 small onion, thinly sliced
2 tablespoons butter or margarine
Salt, pepper and garlic powder to taste
Spray foil with nonstick spray. Layer potatoes, carrots and onions. Season to taste and dot with butter. Fold up packet and place over hot coals or in the oven. Turn packet during cooking to prevent burning. Usually done in 30 to 45 minutes depending on temperature of coals.
If making in the oven, bake at 375°F
