Scalloped Potatoes
6 lbs red potatoes, peeled and sliced thin
2 medium onions chopped
1 stick plus 2 tablespoons butter or margarine
salt and pepper to taste
1/3 cup flour
1 quart milk
1 lb sliced ham
Melt the stick of butter in a large sauce pan. Add about 1/2 cup of the onions. Season with salt and pepper. Cook until onions are tender. Add flour, cook and stir about 3 minutes. Add milk. Whisk and cook until it just starts to thicken. Meanwhile, grease the removeable crock from a large slowcooker. (or use a large dutch oven or casserole dish)
Start with a layer of sliced potatoes. Season with salt and pepper. Sprinkle with onions, dot with butter and top with ham. Repeat layers until out of ingredients. Pour hot milk mixture over all. Bake at 375° for about 1 hour 30 minutes or until potatoes are tender. To save on oven space, cook part way in oven and finish in slowcooker. Or cook entirely in slowcooker. It will probably take about 3 hours on high or 6 hours on low.
