We are completely moved out of our old apartment now and are just waiting for the security deposit check.  Life in our little room is quite fun.  The only thing we need now is internet, and that should be coming within the next week or so when we switch cell phone providers.


Okay, it may sound crazy, but in order to fit the washer and dryer properly in the kitchen area (so as not to create a fire hazard by having the dryer on the living room carpet) I asked the landlord to take out the range.  Bear with me.  In its place, I purchased a single burner--$7 at Wal-Mart--and I of course have a microwave.  When I had a beautiful-but-monstrous range at the old apartment, I never used it.  I feel a little sorry for my husband because I didn't really get very creative with my cooking.  There was just something about that kitchen.  Every time I walked in it, I got sick to my stomach.  It really took some time before I was able to eat in it.  And in fact, even though it was an eat-in kitchen, we put the dining room table in the living room so I could stomach my food.  Maybe it was moldy or something.  I don't know, but my brain just didn't like it in there.  (Oh, I know!  The feng shui must have been off.)  :)


So now I'm in a place that is quite comfortable and I am dying to try some new stuff.  So, if anyone has some good basic recipes that only require microwaving and/or boiling, I'd love to try them--especially if they are low-fat, or can be adapted to be low-fat.  No skillet stuff, though.  There aren't any closets surrounding our hanging clothes, and I don't want to cook anything greasy, overly stinky, etc.


Travis is a real pasta lover (me, too!) and so I experimented with lasagne.  I boiled up some lasagne noodles on the burner, then layered them in a round casserole dish with a can of Hunt's cheapy canned "Meat"-flavored sauce (it's not as bad as you think), italian-style bread crumbs, fat-free cottage cheese, fat-free shredded mozzarella, fat-free sour cream, reduced fat parmesan blend, and italian seasoning; and then stuck it in the fridge to be divided up as needed and nuked.  Of course, we topped it off with Ranch dressing (very little saturated fat.)  MAMA MIA, IT WAS GOOD!  I was pleasantly surprized.  Especially after it had been in the fridge for about two days.  Even though it was very low-fat, the ranch dressing added just enough to bring all the flavors together.


So, if anyone else has some goodies, please pass them my way.


Church is going great.  We are very, very excited about being given the go-ahead to purchase a new house for the Servicemen's Home.  It's currently in a Victorian home about 15 minutes from the base.  It's very beautiful, roomy,  and comfortable, but it's incredibly inconvenient because of the distance.  So we're scouring the area around the gate where the church is for something equally as nice or nicer.  So keep us in your prayers!
