Some people probably are too dumb to understand evolution. Just like some people can't understand relativity.
There are others who do understand it.
Whoever told you that inorganic molecules always get simplier was lying. It is simply false information. One easy example of macroscopic complexity is snowflakes. Formed from water crystals.
As for self-organization on the molecular level, Miller's experiment proved that conclusively. In an experimental re-creation of early atmospheric conditions, molecules organized themselves into amino acids. Which just happens to be the basic building blocks for life. (Funny that God didn't build us with microchips and steel - but guess what, those don't happen to self-organize. Doesn't it make you stop and think just a little that we are built out of one of the classes of self-organizing molecules we know about?)
