People don't have to travel to the sun and measure its temperature with a thermometer to know it's really, really hot. If it happens at the micro scale, there is really no good reason why it cannot or should not happen at the macro scale.

Mathematical "probabilities" ought to simply be thrown out due to the simple fact that life had to occur due to the factors present in the environment. Its chances were 1:1. It happened. So it's entirely unnecessary to grapple with 20 billion this, or 15 billion that.
We presently have thousands of scientists who vigorously attest to the fact of biological evolution, speciation, and the differences in species. We also have viable explanations for biogenesis. We have zero evidence of any creator-god.
That said, I'm not an atheist, and while I have trouble accepting spiritual beings, I have no problem with spirituality, or even the possibility that there is more to the human makeup than simple carbon-based atomic structure with no other properties whatsoever. But to reject evolution just seems like an excuse to promote some religious fantasy that a God or gods exist that care about us one way or another.
