The current NT is "inspired" and is absolutely true and accurate.

"All scripture" however, did not apply to the books not quoted from by the NT Bible writers and should be excluded from "all scripture" inspired and those three books which are either historically incorrect or blatantly pagan or just not quoted are: the Book of Esther, Song of Solomon, and Ecclesiastes, respectively.

I don't know where you got your information from, but both Paul and John remained alive from the 1st century and thus would have had something to do with making sure the Bible in its present form got off to a good start.

Yes, that's right, just as the Bible said, Jesus chose some of his key disciples to survive from his day until the time he would arrive again, so there were people around to help manipulate the necessary things. (Luke 9:27, John 8:52, John 21:20-25).
