Interesting question.
I think the obvious answer is that Adam knew the animals didn't talk but Eve didn't.
My scenario, quite briefly, is that Satan planned the rebellion during the time Adam was alone. Men in certain cultures back then married at around 30. Jesus was baptized around 30. So there is no reason why God would not have allowed Adam to mature emotionally and psychologically over a period of at least 30 years. In that time he would have known the animals don't talk, and maybe that angels do.
Thus likely Satan wasted no time in tempting Eve, who just being created and seeing everything for the first time would have no background when an angel spoke to her, likely in a woman's voice, to eat of the fruit.
So Adam knew the animals didn't talk but Eve likely didn't.
