I think you may be laboring under a misconception. God rested on the seventh day, which under our current calenders is Saturday, since we have traditionally held Sunday to be the first day of the week, not the last.
Practicing Jews give reverence to God on the Sabbath (Friday night from sundown to Saturday sometime).
Christians, however, celebrate Sunday because that is the Lord's day - the day he rose out of the tomb. There is quite a bit of Biblical evidence (Passover) to indicate that Sunday is in fact resurrection day.
However, the day that we call "Sunday" now - is it really an even number of 7-day weeks all the way back to the resurrection? I don't know, and I don't think it's too important. What is important, is to glorify God by praising His son, whom He placed over all things.
