Time Duration : 50-60 minutes
Serves : 4-5 people

A QUICK & SAVOURY BEEF STEW, IDEAL FOR SECONDS

INGREDIENTS
  • 750 grams of cubed beef ( or small strips of beef )
  • 1 can of tomato puree, 250ml
  • 500ml of chicken or beef stock
  • 1 packet of cherry tomatoes ( approx 15-20 pieces )
  • 4 stew potatoes, separately boiled and cut in cubes
  • 3 stalks of celery, sliced
  • 2 large onions, sliced
  • 3 carrots, sliced

Spices

  • 1 tbl of ground cumin
  • 1 tbl of ground cinnamon
  • 1/2 tbl of paprika
  • 3 tbl of crushed black pepper
  • 2 tbl of dark sweet sauce
  • 1 tps of salt
  • 1 tbl of sugar
Method
  1. Stir fry the sliced onions in a large pot until golden brown.
  2. Add in the packets of cubed beef, frying till slightly brown.
  3. Add in the bowl of chicken or beef stock.
  4. Pour in the can of tomato puree.
  5. Stir the contents.
  6. Add in all the spices.
  7. Add in the celery, carrots and cherry tomatoes.
  8. Leave to simmer for a half hour or till the gravy becomes slightly thick. If it doesn't, add one tbl of cornstarch.
  9. Check if the beef is cooked and the carrots tender.
  10. Add in the potatoes.
  11. Cook for another 5-10 minutes.
  12. Serve HOT with rice or bread !!!
