|
Pork belly can be substituted with
chicken.
Handmade yellow flat noodles
can be substituted with any instant dried noodles. ( noodles
need to be soaked for 1-2 minutes in half-boiled water and
drained before use. ) |

INGREDIENTS |
- 500 grams of yellow flat
noodles
- 100 grams of pork belly
( rinsed and lightly washed )
- 100 grams squid or
calamari
- 100 grams large shrimps
- 100 grams of Chinese
vegetables ( xiao bai chai, pak choi, kai lan )
- 50 grams of beansprout
- 2 small or 1 large lime
( or 1 lemon )
- 2 eggs ( beaten )
- 2 green chilles (
sliced )
- and parsley for
garnishing
- 2 tbl of olive oil
- 2 cups of water
- 2 cloves of garlic (
Chopped )

Spices |
- 1 medium onion,
diced/sliced
- 1 tbl dark soy sauce
- 1/2 tbl of salt
- 1/4 piece of shrimp
paste ( belachan )

Method |
- Boil the pork belly for
about 3-5 minutes in 2 cups of water.
- Slice pork belly thinly
and do not throw water. ( to be used as stock )
- Pour in oil, onion,
garlic, shrimp paste, calamari and shrimps, stir fry until
fragrant. After 2-4 minutes, add in Chinese vegetables.
- Add in beansprout and
noodles, stir fry all together for about 5-7 minutes until
noodle is cooked. Add in salt, soy sauce and eggs.
- Lastly, add in stock,
squeeze in the lime or lemon and cover lid for 2-3
minutes.
- Garnish with parsley and
2 green chillies.
- Serve.
