SWEET POTATO CASSEROLE

Potato Mixture:

3 Large FRESH WHOLE SWEET POTATOES
             (or 3 Cups Mashed CANNED SWEET POTATOES)
1 Stick MARGARINE
1 Cup REGULAR WHITE SUGAR
2 Whole EGGS - Beaten   
1 teaspoon VANILLA
1/3 Cup MILK

Boil WHOLE SWEET POTATOES 'til fork tender and peel.
Mash SWEET POTATOES with MARGARINE 'til melted. 
Add REGULAR WHITE SUGAR, BEATEN EGGS, VANILLA, and MILK to mixture. 
Continue mashing to a smooth even consistency.
Spread evenly in a casserole baking dish.  (Mixture can be mixed in same glass casserole baking dish, but wouldn't suggest it if teflon coated.) 


Topping:

2/3 Cup PACKED LIGHT BROWN SUGAR
1/3 Cup MARGARINE - Melted
1/4 Cup PLAIN FLOUR
1 Cup CHOPPED PECANS

Melt MARGARINE and mix together in another bowl with BROWN SUGAR, PLAIN FLOUR and CHOPPED PECANS.
Spread topping evenly on top of Potato mixture in casserole baking dish. 
Cover with casserole baking dish lid or aluminum foil.

Baking:

Preheat oven 350 degrees and bake covered for 20-25 minutes. 
Uncover and continue baking for an additional 10-15 minutes. 
Casserole is done when bubbling hot.
