| Venison Jerky This would be one of my all time favorite game recipes. The marinade is quick and simple. Plus it is awesome for those long days in a stand! 1/3 cup of Soy sauce 1/3 of Worcestershire sauce 1 tsp. Garlic Powder 2.0 pounds or 1 kilogram (does not have to be exact) of lean venison (or any other dark meat) 1 tsp. Onion soup Mix A dab of your favorite hot sauce A few drops of Liquid smoke 1 tsp. ground black pepper (to taste) A pinch of Sugar 1 tbs. Of your favorite BBQ sauce First mix all of the above ingredients in a shallow casserole dish. Trim meat of all fat, and slice into long thin strips, it works a lot better if the meat is partly frozen. Add to marinade mixture, blend, and leave for 1 hour. Remove meat and pat dry. Poke skewers through the end of each strip of meat, hang off top rack of oven set at 150 to 175 degrees for about nine hours or until dark and dry, but still flexible. Remove from oven and ENJOY!
