When I lived in London I met a very nice Jamaican lady running a stall at the St
James's Gardens summer fete. Year after year she would be selling this great
chicken with rice and salad. After a few years she told me the recipe, only
because I kept going back and hassling her. Well here goes. Pre-heat your oven
to 180 degrees centigrade and remember 20 minutes per pound plus 20 minutes.
Dry your chicken, slap olive oil all over it and sprinkle on the chicken seasoning,
celery salt and garlic salt. Take about 4 garlic cloves, but don't crush them,
get half a lemon and stuff them up the chickens arse. Wack it in the oven and
baste it occasionally.
