Swedish Nut Cake
2 c Sugar
2 Eggs, slightly beaten
20 oz Can crushed pinapple, Undrained
2 ts Baking soda
2 c Flour
1 ts Vanilla
1/2 c Walnuts, choppedTopping:
8 oz Cream cheese, softened
4 oz Butter
1 3/4 c Powdered sugar
1 ts Vanilla
1/2 c Walnuts, choppedMix together the cake ingredients.
Pour into a 13x9 inch pan and bake at 350, 36 minutes.Mix together topping ingredients until smooth.
Spread on hot cake.

Swedish Pancakes
3 eggs
1 cup milk
1 1/2 cups flour
1 tablespoon sugar
1/2 teaspoon salt
4 tablespoons butter
1 cup heavy cream
2 tablespoons confectioner's sugar or
a 12 ounce jar of fruit jellyBeat eggs lightly in a large bowl.
Add half of the milk.
Fold in the flour, sugar, and salt.
Melt butter and add it, the cream, and remaining milk
to the mixture. Stir well. Place frying pan over medium heat.
Pour small amounts of the mixture onto the pan.
Cook until pancakes are golden brown around the edges and bubbly on top.
Turn pancakes over and cook until other side is done.
Sprinkle pancakes lightly with confectioner's sugar or
spread with fruit jelly. Makes 3 dozen small pancakes.
