China Snowballs

1/4 cup walnuts, ground
1/4 cup almonds, ground
1/4 cup sesame seeds, toasted
1/2 cup sugar
1 tablespoon shortening
1 pound glutenous rice flour

Mix nuts, seeds, sugar and shortening.
Form into small balls. Fill big bowl with rice flour.
Moisten balls by dipping in water. Place balls one
at a time in the bowl and shake back and forth to coat.
Re-dip in water and coat three times.

Adult: Place in boiling water for five minutes until they float.
Add a cup of cold water and boil 3 to 4 minutes.

Chinese Message Cookies

4 egg whites
1 cup suger
1/2 cup melted butter
1/2 cup flour
1/4 teaspoon salt
1/2 teaspoon vanilla
2 tablespoons water

Write messages on strips of paper.
Younger kids can use stamps with crayola ink pad
to put a stamp message such as hearts, stars, etc....
Mix sugar into the egg whites and blend till fluffy.

Melt butter and cool it.

To the sugar and egg white mixture, add flour, salt,
vanilla, water and butter.

Grease a cookie sheet and pour batter from a spoon
to form three-inch circles.

Place a "message" on each circle, fold it in thirds,
then bend it gently in the center. If the cookies becomes
too hard to bend, put them back in the oven for a minute.
