Ground Nut Soup - Nigeria

1 large tomato
1 large potato
1 onion
2 cups water
1 beef boullion cube
1 cup shelled, chopped unsalted roasted peanuts
1/2 cup milk
2 tablespoons rice

Dice potato, tomato and onion.
Place in pan with cube.
Boil, covered, 30 minutes.
Add peanuts, milk and rice.
Lower heat and simmer 30 minutes.

Red Pepper Paste - West Africa

1/4 cup dry red cooking wine
1 teaspoon ground red pepper
3/4 teaspoon salt
1/4 teaspoon ground ginger
1/8 teaspoon ground cardamon
1/8 teaspoon ground coriander
1/8 teaspoon ground nutmeg
1/8 teaspoon cloves
1/8 teaspoon ground cinnamon
1/8 teaspoon black pepper
1/8 of a medium onion
1 small clove garlic
1/4 cup paprika

Place all ingredients except paprika in a blender.
Cover and blend on high until smooth.
Heat paprika in sauce pan for one minute.
Slowly add spice mixture, stirring until just hot.
Cool and use in following dip recipe:

Spice Dip:
Mix 2/3 cup mayonnaise or salad dressing,
2 tablespoons Red Pepper Paste,
1 tablespoon lemon juice.
Serve with celery sticks.
