Turkey Apple Hash
This is my favorite
way to use up that left-over turkey. Low fat.
2
Tablespoons butter or margarine
½ cup chopped onion
2 large potatoes, cooked and diced ( 4 cups)
2 cups cooked turkey or chicken diced
2 Granny Smith apple, diced
¾ teaspoon salt
¼ teaspoon pepper
dash of poultry seasoning
1 Tablespoon chopped fresh parsley
Heat
butter , medium heat, large skillet.
Add onion and poultry seasoning and cook 3 minutes.
Stir in potatoes, turkey, apple, salt & pepper.
Cook and stir until browned, about 15 minutes.
Sprinkle with parsley.
Could be served with fried eggs on top.
Serves about 4.

Turkey Meatballs
My boys love these so
I make them all the time. I like to experiment by putting
different spices in each time. They seem to go well with just
about anything inside. I also use these meatballs in spaghetti
sauce by adding Italian seasonings to them.
1½ pounds
ground turkey
1 small onion
1 egg
½ cup bread crumbs ( I use whole wheat.)
1 teaspoon salt
seasonings of your choice
¼ cup butter or margarine
2 Tablespoons flour
dash pepper
1 cup milk ( I use non-fat.)
1 cup water
Combine first 5 ingredients , handling gently.
Shape into meatballs. Brown meatballs on all sides in hot butter
in a large skillet over medium-high heat. Remove meat to a
plate.
Into drippings, stir in flour, pepper, and 1 more teaspoon salt.
Cook 1 minute.
Gradually stir in milk and water, heat to boiling.
Return meatballs to skillet, reduce heat to low, cover and cook
10 minutes.
I serve
this over rice or noodles.

Parmigiana Turkeyburgers
Good served with any
shaped pasta on the side.
1 pound ground turkey
¼ cup chopped parsley
¼ teaspoon poultry seasoning
¼ teaspoon Italian seasoning
dash pepper
1 clove garlic, minced
½ cup Italian seasoned bread crumbs
½ cup shredded mozzarella cheese
¼ cup chicken broth
1 8oz. can tomato sauce
½ teaspoon oregano
Combine
turkey, garlic, and spices. Divide into 4 portions and
form into oval patties. Press patties into breadcrumbs on both
sides.
Place in a shallow baking dish coated with cooking
spray.
Bake 450º for 8 minutes.
Turn patties over, cover with combined broth & tomato sauce.
Sprinkle with oregano. Bake 8 more minutes
Sprinkle with cheese and bake 1 more minute to melt cheese.
I also
cheat and use spaghetti sauce from a jar sometimes.
