Pumpkin-nickel
Bread
This one has an
interesting top. ¼
cup vegetable oil
¼ cup melted butter
¾ cup sugar
1 large egg
1 cup pumpkin, canned
1 cup grated apple
2 cups flour
1 teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
½ teaspoon cinnamon
Optional: ½ cup raisins or chopped nuts Topping:
2 Tablespoons butter
2 Tablespoons sugar
2 Tablespoons flour
½ teaspoon cinnamon Mix
together the first 6 ingredients.
In another bowl, mix all the other ingredients except topping.
Combine both mixtures until moistened.
Spoon into greased loaf pan.
Mix topping ingredients together with fingers to make crumbs.
Sprinkle on the top.
Bake 350º for 1 hour.
