    Eggnog Goodies 

I don't actually like to drink eggnog, but I love many of the delicious baked goods made with it. Right after Santa Claus comes by at the Macy's Day Parade on Thanksgiving I bake my first batch of eggnog muffins to begin the official start of our Christmas season.



Eggnog Muffins
I replace half the rum with water and they turn out fine.

2 cups flour
2/3 cup sugar
1 Tablespoon baking powder
½ teaspoon salt
¾ cup eggnog
½ cup dark rum 
5 Tablespoons butter or margarine, melted
1 egg, beaten
½ teaspoon nutmeg

Preheat oven to 400.
Use muffin papers or greased muffin tin.

Sift flour, sugar, baking powder and salt.
Stir in eggnog, rum, butter, egg, and nutmeg.
Only stir until moistened.
Spoon into muffin tin. Makes 12 ( or I make 10 bigger ones.)

Bake 15 - 20 minutes.






  Eggnog Braid 
a delicious  and pretty yeast bread - makes a great gift

1 package dry yeast
¼ cup warm water ( 105
° - 115° )
1 cup warm eggnog ( 105
°-115°)
3 Tablespoons margarine, softened
2 Tablespoons sugar
1 teaspoon salt
½ teaspoon cardamom
¼ teaspoon nutmeg
3 - 3½ cups flour
1 egg yolk
1 Tablespoon eggnog
2 Tablespoons sliced almonds ( for decoration)
2 teaspoons sugar

Dissolve yeast in water. Add next 6 ingredients.
Stir in enough flour to make a soft dough.
Knead dough on a floured surface 5 - 8 minutes.
Shape into ball, place in greased bowl, turn to grease top.
Cover and let rise  in warm place about 1 hour, until doubled.
Punch dough Divide into thirds.
Form three 16 inch ropes of dough.
Braid ropes together on a greased baking sheet.
Pinch the ends to seal.
Cover and let rise 1 hour.
Combine egg yolk and I Tablespoon eggnog and brush on loaf.
Sprinkle with almonds and sugar.

Bake at 375
°  for 25 minutes.







     Eggnog Quick Bread 

2 eggs
1 cup sugar
1 cup eggnog
½ cup melted butter or margarine
2 teaspoons rum extract
1 teaspoon vanilla extract
2¼ cups flour
2 teaspoons baking powder
¼ teaspoon nutmeg

Preheat oven to 350°. Grease bottom of bread pan.
Beat eggs, and add sugar, eggnog, butter, rum, vanilla.
Add flour, baking powder, and nutmeg. 
Stir only until moistened.
Pour into pan. Bake at350 for 45 - 50 minutes.
Check with toothpick.
Cool 10 minutes and remove from pan. Cool before slicing.
