Sunshine Cake

This is cool and refreshing, so I like to make it in the spring and summer.

1 box yellow cake mix

1 ( 11 oz.) can mandarin oranges & juice

4 eggs

3/4 cup Crisco oil

Mix all the ingredients and beat for about 3 minutes. Pour into ungreased 13x9x2 pan. Bake 35 minutes at 350 degrees. Check with toothpick to be sure middle is cooked. When cool frost with icing and refrigerate.

ICING

1 can crushed pineapple & juice ( 2 1/2 cups)
1 ( 3 3/4 oz.) box instant vanilla pudding
1 large ( 9 oz.) cool whip

Mix pineapple and dry pudding mix well. Fold in cool whip.
