  Fall Apple Treats

 I know it is fall when I get in the mood to bake with apples.
Apple cake, pie, crisp.. it's all delicious! Try one of my recipes.
 And treat yourself to my apple time card below before you leave.

     Apple Brownies 
                    Quick, easy, yummy!            

 Cream:  1 stick butter
              1 cup sugar

 Add:      1 beaten egg
              2 peeled, chopped apples

 Sift & add: 1 cup flour  , ½ tsp. baking soda,  ½ tsp. baking powder,  ½ tsp. cinnamon 

   Pour into greased 8 x 8  or  7 x 11 pan.   Bake 350° for 40 minutes.              
   Cool in pan and cut into squares.


Apple Brown Betty
One of the first things I learned to make as a young baker, and it's still delicious.    

 4 cups small bread cubes

 ½ cup melted butter or margarine
 ¾ tsp cinnamon
 ¼ tsp nutmeg
 ¾ cup brown sugar, packed 

4 cups chopped apples
 

  Mix first 5 ingredients and arrange in alternate layers with apples in 1½ quart baking dish. 

 Bake 1 hour at 375° until apples are tender. Serve warm with a scoop of ice cream and a dash of nutmeg. 

Apple Cream Cheese Torte
The crust tastes like a sugar cookie.

Crust:  ½ cup butter
1/3  cup sugar
¼ teaspoon vanilla extract
1 cup flour

Filling:    1 8oz. package cream cheese
¼ cup sugar
1 egg
½ teaspoon vanilla extract
6 cups peeled and sliced tart apples
¾ teaspoon cinnamon
1/3 cup sugar

¼ cup sliced almonds ( optional)

Crust: Cream butter, sugar, and vanilla.  Blend in flour. Pat dough onto bottom and 1 inch up sides of 10 inch springform pan.

Filling: Beat softened cream cheese and sugar, then add egg and vanilla, beat until smooth. Pour into crust. Mix apples with cinnamon and sugar and arrange over cheese layer. Sprinkle with nuts if desired.

Bake 450 degrees for 10 minutes, then reduce to 400 degrees for 35 more minutes.
Cool and refrigerate. Enjoy!

Fresh Apple Cake
A good thing to bring to someone's house when they need comfort. Someone did this for me, so I think of it as Comfort Cake.  It freezes well.

3 cups chopped, peeled apples
1 cup vegetable oil
2 cups sugar
3 eggs
2½ cups sifted flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon vanilla
1 cup chopped pecans or walnuts , if desired

Beat oil, sugar , and eggs. Sift together flour, salt, soda, baking powder, and cinnamon, and add gradually into mixture. Add vanilla. Fold in apples and nuts. 
Bake at 350 degrees for 1 hour in a greased bundt pan. Cool cake in pan for 15 min. before removing.
