| Don't let the name fool you. It is yummy! 8 cups torn lettuce or spinach leaves 1/2 of a medium-sized onion, sliced thinly into rings 3 bacon strips diced 1/4 cup vinegar 2 Tbsp. water 1/2 tsp. salt 1/2 tsp. pepper 1 hard boiled egg, peeled and sliced thin Place lettuce (or spinach) and onion in large salad bowl and set aside. In skillet, cook bacon until crisp. (Do Not Drain). Stir in vinegar, water, salt and pepper. Pour over lettuce and toss till well coated. Top with egg and serve immediately. Makes about 6 servings. |
