Vegetable Parmesan Medley
2 Tbsp. olive oil                                                                         2 (16 oz) cans diced tomatoes
4 yellow squash, sliced                                                               1 tsp. dried basil
4 zuchini, sliced                                                                         1 Tbsp. & 1 tsp. dried oregano
2 onion, chopped                                                                        Salt & pepper to taste
2 green bell pepper, chopped                                                      1/2 cup grated Parmesan cheese
4 cloves crushed garlic


1. Preheat oven to 325 degrees F.
2. In large saute pan heat oil over medium heat. Add all the fresh vegetables and garlic to pan and saute till soft. Add the tomatoes with juice. Season with spices listed above. Transfer to a glass baking dish and bake for 20 minutes. Sprinkle with cheese on top and bake another 10 minutes.
